Healthy Apple Crisp

Juicy Fuji apples bake under a buttery, crumbly topping of oats, almond flour, and toasted walnuts. This healthy apple crisp is lightly sweetened, made with ghee, and gluten-free with certified gluten-free oats.

Ingredients

For the Apple Filling

  • 4 Cups Fuji apples chopped with skin on (about 490g)
  • 1 tsp Cornstarch
  • 2 tbsp Brown sugar
  • 1/2 tsp Ground cinnamon
  • 1 pinch Ground nutmeg
  • 2 tsp Lime juice
  • 1 tsp Vanilla extract

For the Crumble Topping

  • 1/2 Cup Rolled oats certified gluten-free if needed
  • 1/2 Cup Almond flour
  • 1/2 Cup Walnuts roughly chopped
  • 3 tbsp Brown sugar
  • 1/2 tsp Ground cinnamon
  • 1/8 tsp Salt
  • 2 tbsp Ghee melted

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a 6" x 7.5" baking dish.
  • In a bowl, toss the chopped apples with the cornstarch, brown sugar, cinnamon, nutmeg, lime juice, and vanilla until no dry cornstarch is visible. Spread evenly in the baking dish.
    4 Cups Fuji apples, 1 tsp Cornstarch, 2 tbsp Brown sugar, 1/2 tsp Ground cinnamon, 1 pinch Ground nutmeg, 2 tsp Lime juice, 1 tsp Vanilla extract
  • In another bowl, mix the oats, almond flour, walnuts, brown sugar, cinnamon, and salt.
    1/2 Cup Rolled oats, 1/2 Cup Almond flour, 1/2 Cup Walnuts, 3 tbsp Brown sugar, 1/2 tsp Ground cinnamon, 1/8 tsp Salt
  • Pour in the melted ghee and mix until everything is evenly moistened and looks like coarse, damp crumbs.
    2 tbsp Ghee
  • Pile all the topping evenly over the apples.
  • Bake at 350°F for 55 minutes, until the topping is golden and the juices bubble in the center. If the top browns too quickly, cover loosely with foil.
  • Let the crisp rest for 25 minutes so the juices thicken. Serve warm with a scoop of vanilla ice cream.

Notes

  • Use certified gluten-free oats to keep this recipe gluten-free.
  • Honeycrisp or Gala apples work well in place of Fuji.
  • If your dish is very full, set it on a baking sheet to catch any bubbling juices.
  • Swap the ghee for melted butter, or for melted coconut oil to make it vegan and dairy-free.
  • Maple syrup or white sugar can replace the brown sugar 1:1. With maple syrup, the topping will be softer and will brown faster.
  • Store covered in the fridge for up to 4 days. Reheat at 350°F for 10 to 15 minutes.
