Ingredients

  • 1/2 lb Spaghetti 232 g
  • 6 1/2 Cups Water for boiling
  • 2 tsp Salt for the pasta water
  • 3/4 Cup Reserved pasta water
  • 2 tbsp Extra-virgin olive oil
  • 3 Garlic cloves big, thinly sliced (15 g)
  • 1/2 tsp Red chili flakes
  • 1/4 Cup Italian parsley finely chopped, plus extra to serve
  • Salt to taste (optional, for finishing)
  • Vegetarian Parmesan grated, to serve

Equipment

  • Large pot
  • 12-inch skillet
  • Kitchen tongs

Method

  1. Bring 6 1/2 cups of water and 2 tsp of salt to a boil on high heat. While it heats, thinly slice the garlic and finely chop the parsley.
    6 1/2 Cups Water, 2 tsp Salt
  2. Add the spaghetti and cook on medium-high heat for 1 minute less than the package time.
    1/2 lb Spaghetti
  3. When the pasta is about halfway cooked, add the olive oil and garlic to a cold pan. Cook on medium-low heat for 5 minutes, stirring often, until lightly golden.
2 tbsp Extra-virgin olive oil, 3 Garlic cloves
  4. Stir in the chili flakes for about 10 seconds, until fragrant. If the pasta isn't ready yet, turn off the heat.
    1/2 tsp Red chili flakes
  5. Save about 1 cup of pasta water, then drain the spaghetti.
  6. Add the spaghetti and 3/4 cup of pasta water to the pan. Mix well on medium-low heat for 1 to 2 minutes until glossy.
    3/4 Cup Reserved pasta water
  7. Mix in the parsley. Taste and add salt if needed. Serve with grated vegetarian Parmesan and extra parsley.
1/4 Cup Italian parsley, Salt, Vegetarian Parmesan

Notes

  • The salted pasta water and Parmesan usually season the dish well, so taste before adding extra salt.
  • Keep the extra 1/4 cup of pasta water handy and add a splash if the pasta looks dry.
  • Cooking times vary by brand. My package said 11 minutes, so I cooked it for 10.
