
Avocado toast is one of those recipes that works however you want to make it. Toast some bread, mash an avocado, add a topping — and you’ve got a complete breakfast. I make this at least twice a week because it’s fast, filling, and I can switch it up depending on what’s in my fridge. Some days I pile on grated beetroot for earthiness, other days it’s cherry tomatoes for brightness, fresh arugula for a peppery kick, or sliced hard-boiled egg for protein. Pick your favorite, and you’re done.

INGREDIENT NOTES

Whole grain bread with seeds — I use thick-cut whole grain bread (look for varieties with flax, sunflower, or sesame seeds baked in). It holds up beautifully to the avocado spread without falling apart and adds a nutty flavor and texture that complements the toppings perfectly.
Ripe avocados — Pick avocados that yield slightly when you press them gently. They should be soft but not brown or mushy inside. You can mash them ahead of time and store in an airtight container for up to 3 days (see storage section).
Lime juice — Don’t skip this. The acid keeps the avocado from browning and adds brightness to the spread. Fresh lime is best; bottled works if that’s what you have.
Hemp seeds — A nutritional powerhouse with complete protein and healthy fats. You can find them in the bulk section or online. If you don’t have hemp seeds, try sunflower seeds or pumpkin seeds instead.
Hard-boiled egg — Make these ahead if you like. I boil mine for 10–12 minutes, cool in ice water, and store in the fridge for up to 5 days.

HOW TO MAKE AVOCADO TOAST
Step 1: Prepare and mash the avocados
Cut each avocado in half lengthwise around the pit. Gently twist the two halves apart. Using a knife, carefully tap the pit to lodge the blade, then twist to remove it.
With a knife, score the avocado flesh in a crosshatch pattern — make vertical lines, then slanting lines, cutting just deep enough to reach (but not pierce) the skin. Scoop out all the avocado flesh with a spoon, letting it fall into a bowl. Once you’ve scooped out all the avocado from both halves, add salt, garlic powder, lime juice, and black pepper to the bowl. Mash everything together with a fork until you reach your preferred texture — I like a chunky-smooth mix with some pieces still visible. You may not use all the spread for just four toasts — use what you need and store or freeze the rest in an airtight container for up to 3 days (refrigerator) or 1 month (freezer).

Step 2: Toast the bread
Toast 4 bread slices to your preference — I used setting 6 for a golden, crunchy result. The bread should have a bit of crunch without being brittle.

Step 3: Spread the avocado mixture
Working quickly while the bread is still warm, spread the avocado mixture evenly across each slice, using about ¼ of the mixture per slice.

Step 4: Sprinkle chili flakes
Sprinkle chili flakes across each slice for a little heat and depth of flavor.
Step 5: Add your topping of choice
Now for the fun part — customize your toast with one (or more) of these four topping options: – Grated beetroot for earthy sweetness – Halved cherry tomatoes for bright freshness – Fresh arugula leaves for a peppery bite – Sliced hard-boiled egg for protein power

Step 6: Sprinkle hemp seeds and serve
Finish with a sprinkle of hemp seeds on top for extra protein and healthy fats. Transfer to a plate and enjoy while the toast is still warm and crispy. This is best eaten fresh, straight off the toaster.

For breakfast — Pair with a strong cup of coffee or a fresh fruit smoothie. The richness of the avocado pairs beautifully with citrus flavors.
For lunch — Add a simple green salad on the side for extra greens, or serve with a bowl of soup (tomato soup is classic).

STORAGE & MAKE-AHEAD
The avocado spread — Can be made ahead and stored in the refrigerator for up to 3 days in an airtight container (with plastic wrap pressed directly onto the surface to slow browning). It also freezes well for up to 1 month — thaw and use as needed.
Hard-boiled eggs — Make up to 5 days ahead and store in the fridge in their shells. Slice just before assembling.
Toast assembly — Best made fresh. Toast the bread, spread, and top within 5 minutes of toasting for maximum crispness.
Leftover avocado toast — Not recommended. The toast loses its crunch quickly. But leftover avocado spread keeps refrigerated for up to 3 days; leftover hard-boiled eggs store for up to 5 days.

- Avocado ripeness matters: Use avocados that are ripe but still firm. If they’re too soft, the spread will be mushy; if too firm, mashing is harder. Use 3 small avocados or 2 large ones depending on what you have.
