This date nut roll is the sweet I make when I want something festive without the sugar rush. Soft Medjool dates and toasted nuts come together in one pan. Then I roll the log in nutty poppy seeds and chill it. There’s no added sugar, no baking, and it’s ready to slice in about 2 hours.

Recipe at a Glance
This date nut roll is a no-bake Indian sweet made with Medjool dates, mixed nuts, pumpkin seeds, and a coating of toasted poppy seeds. It makes about 18–20 slices with 10–15 minutes of cooking, using one nonstick pan and parchment paper.
What makes it different: The dates are the only sweetener, and everything cooks in a single pan with just a little ghee.

Ingredient Notes

- Medjool dates: They’re soft and sticky, so they bind the roll without any sugar syrup. Dates also bring fiber and potassium, which makes this sweet more filling than a sugar-based one.
- Mixed nuts: Almonds, cashews, pistachios, and walnuts give a mix of crunch and creaminess. Chop them small, because big pieces make the slices crack.
- Pumpkin seeds: They add extra crunch and a little plant protein.
- Poppy seeds (khus khus): Toasting them brings out a nutty flavor that raw poppy seeds don’t have.
- Ghee: Just 2 tsp in a ceramic nonstick pan. It helps the nuts roast evenly and keeps the dates from sticking.
How to Make a Date Nut Roll
Step 1: Prep the dates and nuts
Roughly chop all the nuts and the Medjool dates. If your dates aren’t pitted, slit them open and remove the pits first. Keep the nut pieces small, because big chunks make the slices crack.

Step 2: Toast the poppy seeds
Dry-toast the poppy seeds in a pan on medium-low heat for about 1 minute, until they smell nutty. Transfer them to a small bowl and set aside.

Step 3: Roast the nuts and seeds
In the same pan, heat 1 tsp ghee on medium-low heat. Add the nuts and pumpkin seeds. Roast for 3–4 minutes, stirring often, until lightly golden. Medium-low heat toasts them evenly without scorching the outside.

Step 4: Add the dates
Add the chopped dates, the remaining 1 tsp ghee, and the cardamom, if using. Then turn the heat to low.

Step 5: Cook until it comes together
Keep mixing and pressing for 5–6 minutes. As the dates warm up, everything comes together into one soft mass. Low heat matters here, because dates scorch quickly and turn chewy if overcooked.

Step 6: Shape the log
Turn the mixture out onto parchment paper. While it’s still warm, shape it into a tight log about 1½ inches thick. If it’s too hot to handle, place a napkin on top of the parchment while you roll. Warm dates are pliable, so the log shapes easily and holds once it cools.

Step 7: Coat, cool, and chill
Sprinkle the toasted poppy seeds onto the same parchment and roll the log over them. Let it cool to room temperature, about 25 minutes. Then wrap it in parchment and chill for 1½–2 hours, until firm. Finally, slice into ½-inch rounds with a sharp knife.

Serving Suggestions
These slices are lovely on a Diwali sweets platter or with an afternoon cup of tea. They pair perfectly with a hot cup of my homemade masala chai. For a festive spread, add a bowl of crunchy poha chivda. for a salty contrast.
Storage and Make-Ahead
Fridge: Wrap the log in parchment and keep it in an airtight container for up to 2 weeks.
Freezer, whole log: Wrap it in parchment, then plastic wrap, then foil or a freezer bag. Freeze for up to 3 months. Thaw overnight in the fridge, still wrapped.
Freezer, slices: Freeze the slices on a parchment-lined tray for 1 hour. Then move them to an airtight container with parchment between the layers. Thaw for 10–15 minutes at room temperature.
Keep it wrapped while it thaws, so condensation doesn’t make the poppy seed coating soggy.
Date Nut Roll FAQs
It has no added sugar. All the sweetness comes from the dates, which do contain natural sugar, so enjoy it as a treat.
Yes, and it’s an easy swap. Ghee is the only non-vegan ingredient. Everything else is plant-based.
Coconut oil is the best replacement, in the same amount (2 tsp). Refined coconut oil tastes neutral. Virgin coconut oil adds a light coconut flavor that goes well with dates.
Vegan butter also works, though it’s a little softer.
A neutral oil, such as avocado oil, works too, but you’ll lose the rich ghee aroma.
The method stays the same. Coconut oil firms up in the fridge, so the roll may set slightly faster and slice even cleaner.
Usually the nut pieces are too big or the roll isn’t cold enough. Chop the nuts small, chill the roll for at least 1½ hours, and use a sharp knife.
